Pumpkin Spice Muffins With Cream Cheese Topping Recipe

Ingredients

Pumpkin Spice Muffins

–300 g peeled pumpkin
–150 g wheat flour
–1 packet of baking powder
–25 g (softened) butter
–1 ripe banana
–1 apple
–3 tbsp of honey
–2 eggs
–1 tsp cinnamon
–1 tsp pumpkin spice
–shaved almonds

Cream Cheese Topping

–100 g cream cheese
–100 g (softened) butter
–75 g icing sugar
–1 packet of vanilla-flavored sugar
(–a bunch of walnuts as decoration)

Instructions

Step 1: Firslty, start by peeling the pumpkin and cutting small cubes out of it. Then boil your cubes of pumpkin until they are soft. Drain the pumpkin, add the banana to the cubes and crush and combine them into one mixture. Put the pumpkin-banana mixture in a mixing bowl and stir in the eggs.

Step 2: Secondly, add flour, honey, butter, baking powder, cinnamon and the pumpkin spice and stir to a nice, smooth batter. Further, peel the apple, cut it into small cubes and add to the batter. After that, grease your baking pan or line a 12-hole muffin tray with cases. Meanwhile, don’t forget to preheat your oven at 180ºC. Finally, add the batter to the muffin cases and sprinkle some shaved almonds over the muffins. Bake the muffins in the oven for 25 minutes or until baked through.

Step 3: Remove the muffins from the oven and let them cool off completely. This will prevent the muffins from getting soggy and we don’t want the cream cheese topping to melt off. For the topping, combine the cream cheese, softened butter, icing sugar and the packet of vanilla-flavored sugar and mix it. Do make sure you mix in the icing sugar in little batches. Spread the cream cheese topping on the muffins and finish off with adding half a walnut on top of each muffin.
